Sherry vinegar has a deep, almost warm flavor that is great on salads, as a finishing touch in soups, including gazpacho, and a key flavor in romesco sauce. It has a more robust flavor than red wine vinegar without being sweet like balsamic vinegar.
Rice vinegar (also called rice wine vinegar) is considerably less acidic than wine or cider vinegar, and has a mild delicate flavor. It’s great in slaws and for pickling. Seasoned rice vinegar is rice vinegar with added sugar (or corn syrup) and salt or MSG. Unless you have a specific reason for buying it, don’t—regular rice vinegar is the better option.
